Pumpkin Spice Granola

Now, I'm no food blogger, but this stuff is SO GOOD that I must share! I made this recipe up, and it's delicious! And I threw in some healthy stuff, so you can feel good about sitting down and eating the whole thing! My kids love it, and I'm currently making a second batch to send my daughter in college because she loved it so much! Of course, tweak it however you want to your specific taste, but here's what I did! And of course, since it's October, I had to make it pumpkin spice! So I added pumpkin seeds and pumpkin pie spice! But if that's not for you, just leave it out! This is so easy, even I could do it.
Ingredients:
4 cups Rolled Oats
1 1/2 cups nuts and seeds. I used almonds, pecans, pepitas (because pumpkin!,) and flax seeds (because healthy!)
3/4 Cup melted coconut oil (butter to ghee works too)
3/4 Cup honey (maple syrup works too)
1/2 T pumpkin pie spice
1 t vanilla extract
1 t. seal salt or himalayan salt
Preheat oven to 350. Mix dry ingredients in a large bowl. Melt coconut oil and honey on low heat until blended. Don't boil. Turn off the heat and add vanilla. Pour the liquid onto the mix and stir until everything is coated. Add spice and salt and stir until incorporated. Spread evenly on a parchment paper-lined baking sheet and press down. Bake for 25 minutes. Allow to cool for 30 minutes - this is when it gets crunchy! If you want to add chocolate, this is the time! Then break it up and store! ...or eat it all in one sitting! Your choice.
